Preparation Franklin Tip
Brisket (brisket) Rub 1 tbsp (≈15 g) per 450 g, let rest 30–45 min, smoke at 110 °C until 95 °C internal.
Point / Flat Generous application, low & slow cooking; uniformly dark bark.
Burnt ends Sprinkle again after cutting into cubes, caramelize 10 min at the end.
Steaks & roasts 1 tsp per steak, rest 20 min, sear over direct heat then finish indirect.
