Champion instructions (330 g / 1¼ lb steak) 🔥

  1. Season: ¾ tbsp per side, pat.

  2. Rest: 20 min at room temperature; salt penetrates, sugar melts.

  3. Grill: Sear on very hot direct heat 90 s per side, then finish indirect at 54 °C internal (SCA medium-rare).

  4. Final rest: 5 min, slice, serve.

(Also great on smash burgers, veal chop, tomahawk, or root vegetables.)
